The Aligoté grape, traditionally used by Burgundians in making a 'Kir', produces crisp white wines with fresh citrus notes, and Roulot's is one of the finest. The only wine from Roulot's Domaine not to be put in wood, it is usually aged for only 9-10 months on its lees in temperature-controlled stainless steel vats. The aim is to produce a fresh and fruity Aligoté, and this wine hits right on the mark.
