80% Sangiovese, 10% Colorino, 10% Canaiolo
Production zone: Fiesole
Sangiovese, Canaiolo and Colorino make up the estate’s youngest wine, Grilli di Testamatta (Hothead’s Whims). The young vines (none are over 10 years) are planted in the clay and schist-rich soils overlooking the city of Florence, surrounded by olives and with full southern exposure.
The attentive and accurate work carried out in the vineyards gives this wine the highest quality, reinforcing the philosophy behind “Testamatta”
Harvest is carried out during the second half of September. Following alcoholic fermentation in stainless steel, which lasts about 3 weeks, the wine is aged for 18 months in used barriques. The wine is then assembled and the resulting blend is bottled after a brief period of stabilization. 2,000 cases produced.
