Pedro Ximenez is the name of the grape that produces this extraordinarily concentrated Sherry. The "San Emilio" is almost black in color. The aroma is the essence of sweet raisins. On the palate, the wine is very sweet, smooth and unctuous. This wine is classically used as "syrup" for one of the famous desserts of Jerez: Vanilla ice cream with Pedro Ximenez Sherry. It is also ideal over pancakes. Of course, the wine can be drunk on its own, slightly chilled, in a copita (small sherry glass) or a white wine glass.
