  Wine Information:
The 2007 Robin K  Russian River Valley Chardonnay features all the elements of fine Burgundy-style winemaking. All of the fruit was hand-picked and whole cluster pressed to insure delicate handling and maximum flavor retention.  The growing season in 2007 could not have been more spectacular—that is, it was basically boring! Temperate, dry weather in spring guaranteed excellent fruit set, and the summer followed suit so that the fruit ripened well into October, allowing optimum maturity and the development of classic Chardonnay characteristics.  After pressing, the juice was settled for forty-eight hours and then racked and inoculated with an Epernay strain for fermentation in French oak barrels. Near the end of fermentation, at approximately the three week point, the new wine was inoculated for malolactic fermentation and the barrels were topped up. The lees were stirred every two weeks during malolactic, then monthly during barrel aging. After master blending the barrels in January 2009, a small amount of casein was used for fining prior to filtration. Fifteen months of aging in 25% new French oak yielded a fully integrated wine with concentrated flavors of ripe red apple, tropical fruits, lemon spice and apple custard. The wine’s creamy finish gives it versatility with a wide range of dishes, but pairings with seafood and white meats will be especially rewarded.

Alcohol: 13.9% by volume.
Bottling Residual sugar: 0.06% by weight (dry).  
Aging: 15 months in French oak, 25% new oak.
