Between his modern labels and Polish surname, Domaine Mikulski does not at first glance conjure images of a stereotypical Burgundian winery. Yet one whiff of Francois Mikulski’s Meursault reveals itself as a classic and pure white Burgundy. Established in 1992, François has relentlessly pursued his three ideals of authenticity, purity and elegance through acute attention to biological balance in the vineyard and terroir minded élevage practices in the cellar.
Sustainability: The Domaine practices lutte raisonnée, only diverging from organic methods as an absolute last resort.
Vineyard area: 8.5 ha
Vinification: After meticulous sorting in the vineyards the grapes are de-stemmed and lightly pressed. Once the must is clarified, fermentation can begin. Natural yeasts are used in the fermentation, which typically lasts about 15 days. The wine is then racked into French oak barrels in which they undergo malolactic fermentation and élevage for 10-12 months. François typically restrains his new oak use to about 20%, believing that excessive wood masks full expression of the terroir. The wines are eventually fined to bring out the wine’s full elegance and olfactory precision. Everything is estate bottled.
History: François' father was Lieutenant Mieczyslaw Mikulski who escaped from occupied Poland in 1939, fleeing to England and joining the Resistance troops of the Free Polish Forces. There he met his future wife, a Burgundian woman working on an English army base, and moved to Brussels where François was born and raised. Luckily for us, François spent his formative summers in Burgundy, where he fell in love with the agrarian lifestyle and determined that he would one day make wine himself.
François Mikulski inherited much of his estate from his late uncle, Pierre Boillot, starting in 1992 and continuing until he took over the Gouttes d’Or in 2003. His wife Marie Pierre is the daughter of François Germain of the Château de Chorey. |
