Perez Pascuas   ,

In 1980 brothers Benjamin, Manuel and Adolfo Pérez Pascuas took over the reins at their family winery and decided to exploit the potentially fantastic vineyards planted by their father, Mauro, with the ambitious intention of producing one of the greatest wines in Spain.  No small feat, to be sure, but these brothers have the distinct advantage of being the second generation born and raised among the family holdings in Pedrosa del Duero, one of the Ribera's prime vineyard spots: the family has planted, tilled and harvested this land so long that its wine runs in ther veins.
Since its beginnings, the family owned and operated winery has focused on quality, with much hard work and intense dedication.  Right now their annual bottlings average 400,000, a number which allows them to strictly control the wine-making process from start to finish.  In fact the family refuses to increase production, arguing that more wine means more vineyards planted, means less attention paid to the grapes, means less control overall.  The vineyards they do grow, in Ribera del Duero, cover 110 hectares: 90% Tinto del Pais (Tempranillo) and 10% Cabernet Sauvignon.  At an altitude of 700-800 meters above sea level, the hot continental climate here is tempered by the Atlantic to the west, ensuring strong acidity levels.  More than half of the vines are old, and the average age throughout the holdings is 25 years.
The Pérez Pascuas Brothers stress balance and complexity in their wines: strength vs elegance, subtlety vs opulence, drinking vs comsumption.  The estate does a "pre-selection" in early September, removing the less-ripe grapes; the fruit is then harvested late for high grape sugars and maximum polyphenols, which are further maximized by macerations that can last as long as one month.  The brothers also stress fruit character by fermenting the grapes by the parcel.  All oak is new or nearly-new, with wine racked from new oak barrels to one-year old barrels, to two-year old barrels; after 3 years the barrels are discontinued.
