Enrico Scavino has been at the forefront of the modernist movement in Piedmont since the 1980s, and is today one of the most respected and highly regarded winemakers in all of Italy. Scavino diverged sharply from the tough-as-nails-when-young traditional style of Barolo to produce soft and lush wines that are delicious within months of release as well as later in their evolution, applying the same winemaking techniques to Barbera and Dolcetto. The “Rosso da Tavola” (a Dolcetto and Barbera blend), Dolcetto, and barrique-aged Barbera “Carati” are sumptuous wines that consistently rate the highest scores, and yet are available at excellent prices.  The most recent addition to his line-up is the Sauvignon/Chardonnay blend “Sorriso”, a mouthwatering, rich blend of the two varietals with no wood aging.

Farming Practices:
The estate follows the principles of an “integrated agriculture” in the vineyards.
Fertilization: soil fertility is maintained mainly with organic fertilizers. Only in the case of obvious mineral deficiencies is a careful mineral fertilization carried out.
Soil management: the soil is tilled between one vine and another in each row in order to control weeds, improve the soil structure, improve drainage and make the root system grow deeper.
Spontaneous cover crops (grass) are left between the rows of vines and mowed in order to prevent soil erosion, provide input of organic matter and natural Nitrogen.
Plant protection: the estate takes part in the 2078/92 EU regulation. This regulation aims to encourage low-environmental-impact methods and to improve the preservation of natural resources in rural areas through agricultural and environmental measures that vary greatly according to each area. The use of plant protection products is limited in terms of:
- type
- dosage
- frequency of administration
in order to safeguard human health and the environment.
At the estate the degradation rates of the products are respected and all pest/disease control treatments are suspended one month before the harvest.
Criteria of rationality are followed and only products that are carefully selected, have a limited range of action, last short periods and that do not cause resistent strains, populations of fungus, or insect infestations are utilised. Integrated insect and disease control criteria are followed in that pests are carefully monitored in order to spray only when it is strictly necessary. Also, biotechnological means are used such as
pheromone traps (especially to monitor the grape-fruit moth). Careful management of the vegetation on the vines is carried out in order to foster good air circulation, good exposure to light and to reduce the need for pest and disease control products (so that lower doses can be used). No OGMs are used.
In the cellar, the quantity of SO2 in the wines is far beneath the limits foreseen by the Italian regulation.
In 2007 the estate took part in a project of the Chamber of Commerce called “Vino Sicuro” (“Safe Wine”) and which was followed up by Enocontrol Scarl of Alba (a wine analysis laboratory) that tested a wine chosen by the estates, in Scavino’s case the ’03 Barolo. All the values of the substances tested were found to be lower than the limits foreseen by the European and Italian regulations.
